A simple, easy to make gluten free (and grain free) veggie breakfast.
(Takes 10 minutes tops)
Start with a bowl of fresh greens
Fry off some mushrooms and baby tomatoes in a pan (use some low fodmap garlic oil for flavour).
Add two poached eggs on top with salt and pepper… voila ;)
Iron, vitamin C, calcium, vitamin d, vitamin B12, selenium, zinc and copper.
Low carb (stuff all carbs actually), contains protein and dietary fibre.
Grain free, gluten free, dairy free and low fodmap (plus easy on the digestive system).
Pretty damn tasty too I might add.
